I tried to make this recipe several times, but it was just not well done. The surface of the bread was bumpy and the outside was very caramelized. The crust, while a bit thin on the surface, was a nice color and had a nice crumbly texture.
The Breville wheat bread recipe was not as good. As with the white bread, we found it to be more problematic. It had to be mixed thoroughly, which resulted in a flattened loaf on one side and a lumpy loaf instead of a size that could be properly used in a sandwich. The crust and inside of the bread are correct in texture and color, but nothing special. The base of the wheat bread was quite thick and took extra effort to cut.
This bread machine struggled to produce decent gluten-free bread. The resulting bread barely puffed up and had a lot of flour floating around inside. The crust appeared to be a good medium-dark baking color, but the surface was almost crustless, with a nice contrast between the lightness of the surface and the darkness of the sides. The dough was undercooked and easily doughy when pressed with a finger.
