What is a Dutch oven?
Dutch ovens come in a wide variety of materials, sizes and shapes, with different uses and names.
There are many different types of Dutch ovens, but a traditional Dutch oven is a thick-walled cast iron pot with a heavy, airtight lid.
They range from flat-bottomed to three-legged, depending on their intended use.
Originally used to cook stews over an open fire for long periods of time, they had to be of the highest quality.
Today, Dutch ovens have evolved into more modern forms. In most English-speaking countries, they are called casseroles. In other words, it is a heavy pot that can break a leg before it breaks.
Dutch ovens are primarily used inside convection ovens and are usually ceramic lined for appearance rather than functionality.
Dutch oven cooking is ingrained in many cultures around the world, including soups, stews, breads and cakes.
Two types of Dutch ovens for baking sourdough
There are two types of Dutch ovens, which differ in appearance and ease of use.
1. Outdoor Dutch ovens (campfire Dutch ovens)
This type of Dutch oven is the prototype of the Dutch oven mentioned above and is used on an open fire. Some have a flat bottom and can be used in the same way as indoor Dutch ovens.
The design is very simple, mostly plain black cast iron pots. They come in different shapes and sizes and each has its own purpose.
If you want to make stews, for example, a huge deep domed pot with wooden legs is ideal. A round, deep, flat-bottomed pot is suitable for baking bread.
There are no specific rules, but the best ones for sourdough will be discussed later.
Some Dutch ovens need to be seasoned (greased) to prevent the pan from rusting (it can rust in a few days).
Rust can stick to the dough, stain the bottom and sometimes change the taste.
2. Indoor Dutch ovens (modern Dutch ovens)
There is now a wide range of household Dutch ovens designed for use in convection ovens. They are mainly known as “pans”.
Unlike outdoor ovens that can be used indoors, these will not necessarily be able to cope with an open fire with intense flames.
They are coated with enamel on the outside and inside and can be finished in a variety of colors. Many brands compete to offer Dutch ovens in a variety of colors.
Dutch ovens come in a variety of sizes and shapes and can also be used in convection ovens.
These modern enameled ovens do not require seasoning and are sometimes coated with a non-stick coating on the inside.

How To Pick The Best Dutch Oven for Sourdough Bread | Ultimate Guide 2023
Tips for successful baking of bread in a Dutch oven
Here are some tips for baking bread in a Dutch oven
Bake bread on a floured surface - When forming the dough, dust your hands and the surface well with flour. This will prevent the bread from sticking and falling apart.
Dust the dough with flour as you handle it - again, dusting the dough with flour will keep it from sticking.
Let the bread rise for 45 minutes before baking - Allowing the bread to rise slowly gives the yeast time to absorb the sugars in the dough and creates lots of air bubbles when baking, resulting in a lighter texture.
It also allows the gluten protein chains to expand and trap the air bubbles, resulting in a more airy bread. In addition to baking bread, I also use my Dutch oven to bake pizzas.
Set the oven to 450°C and bake until the bread is cooked through - For larger loaves, you may need to reduce the heat after about 10 minutes.
Be careful not to burn yourself when removing the bread from the Dutch oven - If you toast the bread, the melted ingredients may leak out of the oven and damage the bread. Slice once cooled for a beautiful presentation.
How to choose the best Dutch oven for bread in 2023
When you're trying to buy the best Dutch oven for bread in 2023, there are a lot of things to consider. We've put together a list of what we think is most important when choosing a Dutch oven and what you should look for when shopping around.
Price
What is your budget? How much do you want to spend on these appliances? Dutch ovens come in all price ranges and high quality, so there is bound to be one that fits your budget.
Quality
Product durability and reliability is certainly up for debate with many different brands, but I'm sure all of our products want to last longer than one use! It's a good idea to spend more money on ours, as we have a lot more to spend on them than we would on a product that would last us years.
The brand
Who created it? Do they have a reputation for providing high or low quality products? Do they have a good warranty or a limited warranty?
Size
How many people will you be cooking for? Keep in mind that larger ovens are more expensive. Be sure to measure your counter space before you buy, so you don't have to try to fit something too big into a small space.
Interior surface texture
Some of the best Dutch ovens for baking are coated with enamel, while others are not.
If not, be sure to buy one with an interior surface (e.g. Teflon) that won't absorb liquids or change the taste. I've found that Le Creuset pans are very effective because of their speckled texture that prevents sticking on the outside.
Reliability
How long has the brand been around? How is the customer service? Frankly, there's nothing worse than waiting for something you just bought, so I try to buy products from companies that have good return policies and fast shipping/transit times! I recommend buying products from companies that have

Ease of use
Are all the functions easy to use? Some Dutch ovens have fancy knobs that allow you to adjust the temperature while wearing gloves, but when paired with a super heavy lid, they can be difficult to open and close.
The simpler they are, the easier they are to use and clean afterwards.
Material
Ceramic, stone or cast iron? What surface is it made of? Is the lid lined with porcelain? Stone and cast iron are both great options when it comes to the best Dutch oven for pots and pans, but if you want something that will be easier to clean, I recommend buying a coated model.
Don't worry if its color is unappetizing at first, because over time, its flavor will develop into something much tastier! Cast iron gets better with age.
Cooktop Compatibility
How do you cook food in your best Dutch oven for baking without burning your kitchen? I have found that the best products are those that have multiple heat settings for different types of cooking.
Also, some models can't be used with electric cooktops, so always check which ones they are compatible with.
Versatility
Is it only for baking bread or can it also cook roasts, make soups and stews? If you're looking for a single product, I'd recommend buying a model that is limited in its capabilities, but if you want something versatile, I'd go with something that has multiple uses (and multiple benefits). I would choose something that has
Keep in mind that the bigger the product, the more expensive it will be and the harder it will be to clean!
Design and Color
If you're like me, you care about the look of your kitchen. Does the design and color of the product match your existing appliances? Are the handles easy to grip?
Is it too heavy for you to move? The design of the product is just as important as its functionality, so don't forget to consider this when shopping.
Oven Capacity
How big can it hold? The best Dutch ovens for baking are 5 or 6 quarts, which should fit 1-2 people, but if you need something larger than 2, check out our buying guide below!

To use this technique, you can preheat your Dutch oven in oven for about 30 minutes before placing the bread dough inside. Just before putting the dough in the oven, you can pour a small amount of water (about 1/2 to 1 cup) into the bottom of the Dutch oven. This will create a burst of steam when the dough is added, which can help to improve the crust and texture of the bread.
It's important to note that not all Dutch ovens are designed for use with water, so be sure to check the manufacturer's instructions before trying this technique. Additionally, be careful when adding water to a hot Dutch oven, as the steam can be very hot and can cause burns.
Do I want an oval or round Dutch oven?
The choice between an oval or round Dutch oven ultimately comes down to personal preference and how you plan to use it. Both shapes are great for cooking a wide range of dishes, but there are a few key differences to consider.
Round Dutch ovens are generally more versatile and can be used for everything from soups and stews to bread and roasts. They are also easier to store since they can be nested inside each other. If you are looking for a general-purpose Dutch oven that can handle a variety of cooking tasks, a round one might be a good choice.
On the other hand, oval Dutch ovens are ideal for cooking longer cuts of meat or whole chicken since they provide more surface area for these types of dishes. They are also great for cooking casseroles and other baked dishes that require a larger surface area. If you frequently cook larger cuts of meat or plan to use your Dutch oven primarily for baking, an oval shape might be more suitable.
Ultimately, the decision between an oval or round Dutch oven comes down to personal preference and how you plan to use it. Consider the types of dishes you will be cooking and which shape will work best for those dishes.
Is a 4 qt Dutch oven big enough for sourdough?
Yes, a 4-quart Dutch oven can be big enough for baking sourdough bread. However, the size of the Dutch oven will depend on the size of your bread loaf and personal preference for the size of the bread. A 4-quart Dutch oven is generally suitable for baking bread with a dough weight of around 1-2 pounds. If you are making a larger loaf, you may need a larger Dutch oven.
When using a 4-quart Dutch oven for baking sourdough bread, it's important to make sure that the dough has enough room to expand and rise during baking. To avoid overcrowding, you may need to shape your bread dough accordingly or use a slightly smaller loaf size.
Overall, a 4-quart Dutch oven can be a great option for baking sourdough bread, especially if you're baking smaller loaves or prefer a more compact size.
Can sourdough go in a cast iron Dutch oven?
Yes, a cast iron Dutch oven can be a great vessel for baking sourdough bread. In fact, many bakers recommend using a cast iron Dutch oven for sourdough bread baking because it can help create a crispy crust and provide a more consistent temperature during the baking process.
To use a cast iron Dutch oven for baking sourdough bread, preheat the Dutch oven in oven for about 30 minutes before adding the dough. Once the dough is ready, carefully remove the Dutch oven from the oven, and place the dough into the preheated pot. Be sure to score the top of the dough with a sharp knife or razor blade to allow for proper expansion during baking.
Cover the Dutch oven with its lid and return it to the oven to bake. The lid will help trap steam in the pot, which will create a humid environment and allow the bread to rise and develop a crispy crust. After the initial baking time, remove the lid to allow the bread to brown and bake until it is fully cooked.
Overall, a cast iron Dutch oven can be an excellent choice for baking sourdough bread and can help you achieve professional-level results at home.
Do you really need a Dutch oven for sourdough?
While a Dutch oven can be a great tool for baking sourdough bread, it is not necessarily essential. There are other methods you can use to achieve similar results, such as baking on a baking stone or using a loaf pan and a steam pan.
Baking on a baking stone is a popular method for baking artisan bread, including sourdough. You preheat the baking stone in the oven and then place the shaped dough directly onto the hot stone. This can create a similar steamy environment to a Dutch oven, resulting in a crispy crust and chewy interior.
Another alternative is to use a loaf pan and a steam pan. You place the shaped dough into a loaf pan, and then place a pan of hot water in the oven alongside the loaf. The steam created by the water can help create a similar effect to the steam created by a Dutch oven, resulting in a crisp crust and a chewy interior.
So, while a Dutch oven can be a great tool for baking sourdough bread, it is not absolutely necessary. There are other methods you can use to achieve similar results, and the most important thing is to experiment and find the method that works best for you and your bread.
Do you grease a Dutch oven for sourdough?
No, it is not necessary to grease a Dutch oven when baking sourdough bread. In fact, greasing the Dutch oven can actually prevent the bread from forming a nice crust and may result in a loaf that is too moist.
Instead of greasing the Dutch oven, it's recommended to dust it lightly with flour or cornmeal to prevent the dough from sticking to the bottom. You can also use parchment paper to line the bottom of the Dutch oven, which can make it easier to remove the bread after baking.
To prepare the Dutch oven for baking sourdough bread, simply preheat it in the oven for about 30 minutes before adding the dough. Once the Dutch oven is hot, carefully remove it from the oven, dust it lightly with flour or cornmeal, and then add the dough. Score the top of the dough with a sharp knife or razor blade to allow for proper expansion during baking.
Overall, it is not necessary to grease a Dutch oven when baking sourdough bread, and doing so may actually hinder the results. A light dusting of flour or cornmeal, or using parchment paper, can be a better option for preventing sticking and ensuring a good crust.
Is cold fermentation necessary for sourdough?
Cold fermentation is not absolutely necessary for making sourdough bread, but it can help to develop the flavor and texture of the bread.
During cold fermentation, the dough is left to rise and develop flavor in the refrigerator for an extended period of time, typically overnight or for several days. This slow fermentation process allows the natural enzymes in the dough to break down complex carbohydrates and gluten, resulting in a more complex flavor and a softer, more open crumb.
In addition to developing flavor and texture, cold fermentation can also make it easier to handle the dough and shape it into a loaf. The cold temperature of the dough can make it less sticky and easier to work with, resulting in a better-shaped loaf.
However, if you do not have the time or space to do a cold fermentation, you can still make delicious sourdough bread with a shorter fermentation time. It may not have the same depth of flavor or texture as a longer-fermented loaf, but it can still be very tasty.
Overall, cold fermentation is not absolutely necessary for making sourdough bread, but it can be a helpful technique for developing flavor and texture. The best way to determine if you prefer cold fermentation or not is to experiment and find the method that works best for you and your taste preferences.
