What is a pellet smoker (grill)?
Pellet smokers are grill smokers fueled by small compressed wood pellets. How does a pellet smoker work?
Place the pellets in the pellet grill hopper (most brands claim you must use their brand-specific pellets, but that’s usually not true), calibrate the on-board computer to the desired temperature and walk away for 15 minutes. The grill computer turns on a brazier in the center of the grill and begins turning an auger that feeds it pellets to generate heat and smoke. This process is usually controlled by an internal fan and temperature controller. The firebox is usually not in direct contact with the grill grate, but is separated by an angled steel plate that catches the dripping oil and sends it from the firebox to a saucer. This means that most pellet grills are cooked by indirect heating, with lower temperatures than gas or charcoal fires.
