Ice and salt machines make delicious ice cream. They can produce ice cream as good, and sometimes even better, than the other two types. However, they are not suitable for everyday use in the home kitchen.
You need a lot of ice and rock salt. And it’s very messy. If you want to make ice cream occasionally for parties or barbecues, this is the perfect choice.
However, this guide is specifically for ice cream makers for everyday use, so we don’t intend to feature any others in this article.
Ice cream freezer bowls
These machines have a removable bowl that you need to pre-cool in your freezer for at least six hours.
The bowl contains a special gel that is chilled in the freezer and transfers its coldness to the ice cream mixture when it is then stirred in the machine.
Advantages of freezer bowl machines
First of all, they are much more compact than other ice cream makers. This makes them more suitable for small kitchens and much easier to store.
And another (very important) reason is that they are cheap to buy and easy to maintain, as they use relatively basic technology.
You can buy them for very little money and be sure they will last for many years.
Disadvantages of freezer bowl machines
First of all, the bowls must be chilled in the freezer for at least six hours before being used. This requires advance preparation.
Second, you need space for the bowl in the freezer. And they are not small. Different models have different bowl sizes, so check the dimensions.
You can’t make ice cream more than once, as the bowls are pre-frozen before use. However, unless you buy another bowl and have room in your freezer for two bowls.
Compressor Ice Machines
A built-in compressor churns and cools the ice as it is churned.
To make it, simply add the ingredients to the ice cream maker and press the button. It’s very easy.
Advantages of compressor ice cream
The most convenient and flexible ice cream maker. Just remember to put the bowl in the freezer the night before.
You can start making homemade gelato, sorbet or ice cream whenever you feel like it. And once the first batch is done, you can immediately start making the next batch.
It has more features and options than other machines. Some can be optimized for ice cream, gelato and sorbet. Some are programmed to pre-chill the bowl.
Some automatically shut off when the ice cream is ready. Others keep the product at the right temperature and consistency for a period of time after it is finished.
Disadvantages of compressor machines
They are large and heavy. So they will certainly look attractive on your countertop, but make sure you have enough space!
And despite their size, they don’t have a huge capacity. They don’t make larger quantities than freezer bowl ice cream makers.
Compressor vs. freezer bowl machines
Compressor machines are larger, heavier and more expensive.
And of course, with built-in compressors and complex electronics, there can be more problems. So it’s more important to check the warranty and service.
