Cooking on high heat is often the secret to good taste, whether it’s browning steaks, roasting vegetables, grilling meat or thickening a sauce.
The unique flavors and aromas of high temperature cooking can be enjoyed in restaurants. However, non-stick frying pans are often not considered suitable for high temperature cooking.
This fear is exacerbated by the fact that Teflon (PTFE) or non-stick coatings break down at 500°C and the toxic fumes released are lethal to humans and animals.
First of all, it is always advisable to cook food at medium heat to preserve the non-stick coating for longer. However, there are several non-stick frying pans that are ideal for high heat, can withstand high oven temperatures, finish the food and add flavor.
After testing various products, we’ve put together a list of the best non-stick frying pans for high heat, so you can shop with confidence and cook to your heart’s content. You can also check out our ranking of the best non-stick non-stick frying pans without Teflon and our ranking of the best ceramic non-stick frying pans.

What is Tawa or tava?
A Tawa is much like a wok or cooking pot. It is a tool often used in Indian cooking. It is most commonly found in Asia, but is also found in Caribbean and Balkan cultures.
The classic dosa tawa is made of heavy cast iron. If properly cared for, a tawa can be used for years.
Today, there are more modern versions made of stainless steel or copper. However, they are not as durable as black cast iron.
They are made in a variety of sizes. They range in size from as small as 10 inches to as large as 30 inches.
They can be used for cooking vegetables, meats, stir-fries, and dosas, as well as for baking bread.
Tawas can also be used in an inverted position. In many Asian villages, people still use tawas upside down to make flat bread.
Anything that needs to be cooked evenly over high heat can be cooked in a tawa.

How To Choose The Best Non Stick Pan For High Heat | Ultimate Guide 2023
Good thermal conductivity
It is surprising how many frying pans have poor thermal conductivity, which makes it difficult to transfer heat. Not to mention that some take a long time to heat up. So make sure that your frying pan is at least made of a material that works well. Of course, different materials have different advantages and disadvantages.
For example, cast iron conducts heat well and retains heat, but takes longer to heat up.
Stainless steel also has good thermal conductivity and heats up very quickly, but it is not a very durable material and cannot withstand high temperatures as well as cast iron pans.
If you come across an unfamiliar material, always research its pros and cons before investing. Of course, make sure the pan can withstand the extreme heat you're going to subject it to! This should be at least 450ºF (230ºC). It should be at least 230ºC (450ºF).
We've all worked with very poorly designed pans. They are terrible. You want to throw it away. Choose a pan you like the design of, especially since frying pans are expensive.
Personally, I prefer a flat bottom. A flat bottom gives the food more surface area and makes it easier to heat. And don't forget the handle. And don't forget the handle! Make sure it's extra sturdy and easy to use.
It will also work better if it is made of a material that can be placed inside the oven. This way, you can finish off the pastries you bake on the stove in the oven.
Finally, unfortunately, you have to consider the price of the pan. High-quality, non-stick, heat-resistant baking pans can be quite expensive.
But you don't necessarily have to buy the most expensive product on the market! But you don't always have to buy the most expensive product on the market! Sometimes, great non-stick frying pans can be found at a very affordable price.
PFOA-free frying pan
Non-stick coatings made from PFOA produce toxic gases at temperatures above 500°F. The toxic gases can cause flu-like symptoms and fever, and are said to be carcinogenic. That's why frying pans must be PFOA-free.
A frying pan should distribute heat evenly over the entire surface of the pan to avoid hot and cold spots. Otherwise, some areas will brown and burn, and other areas will not cook.
An even surface on the pan is a prerequisite for even heat distribution. Otherwise, the lower part of the pan in contact with the cooking surface will be hotter than the upper part of the pan.
The material of the handle plays a major role in ensuring that it can withstand hot ovens.
Stainless steel handles can be placed in a heated oven, while handles made of Bakelite or silicone will change at high oven temperatures.
Weight and balance
Cooking on high heat requires turning the pan with the wrist. Therefore, the pan must be reasonably heavy and balanced so that the food can be easily turned and tossed.
Heat retention properties
The pan must have a highly insulated base that retains heat and does not warp easily and is suitable for cooking at high temperatures.

Frequently asked questions
Which cooking methods work well at high temperatures?
First, it is useful to explain which cooking methods require this frying pan. This is because if you don't use any of them, there is no point in buying this type of frying pan.
But with this frying pan, you'll be surprised how easy it is to cook everyday food.
Cooking methods that take the temperature up to 400°C include frying, baking, shallow frying and stir-frying. In other words, they are all techniques you use in a frying pan.
These cooking methods can be done at low temperatures, but they can also be done at high temperatures over medium heat.
In baking, the Maillard reaction (browning of the food) occurs at a temperature of at least 300°C. It can also be increased to 500 °C.
This technique is used to crisp up the food, giving it a beautiful brown colour and a delicious caramelized or meaty flavor.
Cooking starts at the lowest temperature of 160ºC (320ºF), but the temperature must be gradually increased to cook the food properly.
It is therefore almost impossible to avoid these temperatures. It is therefore important that the frying pan can withstand high heat.
Why can't all non-stick frying pans withstand high heat?
Most non-stick frying pans manufactured before 2013 used toxic materials. These include PFTE and PFOA. You may or may not have heard of these two substances, but in short, they are "bad stuff".
When a frying pan is heated above 400°C, toxic fumes are produced. At the same time, they weaken the non-stick coating and shorten the shelf life after use.
In addition, the coating may crack. Although cracking has no negative effects on the body, the metals leached from the cracking can be destructive over a long period of time.
So it is not a bad idea to stay away from such frying pans.
Most frying pans manufactured since 2013 do not contain these harmful chemicals and materials. However, check the packaging to be sure.
What is a high temperature frying pan?
The best high-temperature frying pans are made of hard materials such as cast iron, stainless steel and carbon steel. Other modern material mixtures have been created, but who knows what long-term effects they may have. So we want to stick to the basics.
We also want to choose a frying pan of an affordable size. Frying pans are particularly expensive. So buying an 8-inch frying pan is pointless. The bigger the better, and the easier it is to use.
A frying pan must be able to withstand high temperatures, and it must also be able to distribute the heat evenly and retain some heat.
At what temperatures can non-stick frying pans be heated?
Non-stick coated pans can be heated up to 500°F. Above this temperature, the Teflon coating will break down and even PFOA-free Teflon pans will begin to crack.
Can ceramic frying pans withstand high heat?
Ceramic coatings begin to break down at temperatures up to 800°F. However, not all non-stick ceramic frying pans are the same. In reality, it depends on the manufacturer and the quality of the coating. Traditional non-stick coatings must meet FDA regulations, while ceramic coatings have no such restrictions. As a result, quality varies and some ceramic frying pans do not last long when frying at high heat.
How do I know if a frying pan is oven safe?
All modern frying pans can be used in the oven up to a certain temperature, the most important being the temperature difference. You can check the oven resistance of a frying pan by looking at the handles of a non-stick frying pan. If the handle is made of stainless steel, it can easily be placed in an oven with a maximum temperature of 500°F. However, if the handle is made of Bakelite, silicone or rubber, it should not be placed in a heated oven. Check the manufacturer's manual or make sure the temperature does not exceed 375°F.
What types of cookware can withstand the highest temperatures?
Cast iron, cast enamel, carbon steel and stainless steel can withstand cooking at high temperatures. Unfortunately, these types of cookware do not have the convenience of a non-stick surface. However, cast iron retains heat well and stainless steel is easy to clean.
With proper seasoning, they can be made temporarily non-stick.
Non-stick frying pans will free you from sticky burnt bits on the bottom, but frying at high heat in a non-stick pan requires careful consideration from oil selection to the temperature level required to allow the high heat to soak up the flavors. The subtle nuances of the pan structure, handle material and non-stick surface can be crucial when using a frying pan at the highest possible heat. To save you from endlessly researching such frying pans, we've tested and analyzed them all and carefully compiled a list so you can safely enjoy cooking on high heat.
